Think we finally nailed the perfect fried chicken. It involved laying out the pieces a few hours beforehand to dry out and reach room temperature, salting and spicing the skin well before the double dip of batter, and then 5 minutes in the boiling oil bathtub before finishing in the oven. We threw in some aging tortillas afterwards since the oil was still going, so making nachos tonight.
