Min is (justly) proud of his oven-baked french fry recipe and asked me to make sure I posted it here on the blog, so here it is! Dr. B compared it favorably to our reigning favorite fry from Five Guys. Here goes: chop 3 or so Yukon Gold potatoes into french fry-like shapes. Toss them with olive oil and a big handful of salt. Arrange them on the pan so they’re all separated from one another. Roast in a preheated oven (the preheating is very important!) at 425 degrees for 25 to 30 minutes. Voila, crispy, salty perfection! We had them last night with sliders and Min pronounced it the best meal I had made since the start of Covid, so wow, mom got mad props last night!!! What *didn’t* get mad props was our potato chip experiment. We used the mandoline slicer to get paper-thin slices of potato, but let them burn to a crisp before remembering they were in the oven.
