With 2020 on its way out the door, Min suggested we make a list to recap all the new and different things we tried this past year. Cooking fried chicken was on the list at #24 — it’s something we never would have attempted at home but that has turned out to be a quest that is weirdly fun. Above is tonight’s try: our fourth attempt overall. This recipe used exactly 11 herbs and spices, echoing a well-known secret recipe, and we brined beforehand and double-dipped in the batter. The crust was nice and crispy, but the brining + salt in the batter made it a touch too salty overall. We’re getting closer though! Batch #5, sometime to come in 2021, is going to bring it all together I think!
